Description
These oatmeal raisin cookie recipe checks all the boxes: crunchy, chewy, ooey, gooey, and simply delicious.

- 1 cup vegetable oil
- 3/4 cup brown sugar
- 1/4 cup maple syrup
- 1 egg
- 1/2 tablespoon vanilla extract
- 1/2 tablespoon molasses
- 2 3/4 cups old fashioned rolled oats
- 1/4 cup all purpose flour
- 1 tablespoon cinnamon
- 1/2 teaspoon baking soda
- 1 cup raisins
- optional: add in 1/2 cup chocolate chips or swap equal amounts raisins to chocolate chips
Instructions
- Preheat oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
- In a medium bowl mix oats, flour, cinnamon and baking soda together until combined.
- Using a stand mixer on low or a whisk, combine vegetable oil, brown sugar and maple syrup. Mix until well combined. Add eggs, vanilla and molasses. Mix for one minute.
- On low, add all the dry ingredients until just combined. Add in raisins and mix until evenly dispersed. Do not over mix.
- Using a large ice cream scoop, scoop balls of cookie batter onto baking sheet. Bake for 14-16 minutes. Halfway through, remove baking sheet and tap it on the stovetop to help cookies evenly spread. They should be light golden brown when they are done, and slightly underdone as they will finish baking while they cool on the pan.
- Cool for at least 5 minutes and then transfer cookies to cooling rack, allow to cool for at least 10 minutes. Enjoy!
Notes
- If you want to add chocolate, either replace the raisins with the same amount as chocolate chips or add in 1/2 cup.
